June Feast: Oven Baked Chicken Parmesan

This chicken dish is a delicious and easy-to-prepare main entry that can be paired with a variety of fresh vegetables, such as squash, beans, and peas, and it also works well with potatoes, pasta, and a garden salad.

Oven Baked Chicken Parmesan

Ingredients:

6 to 8 chicken breasts or thighs (skinned)

Melted butter for coating

1 cup crushed packaged herb stuffing

2/3 cup grated Parmesan cheese

¼ cup chopped parsley

1 clove garlic, minced or ½ tsp. minced garlic

Directions:

Mix dry ingredients in a large bowl. Dip each chicken piece in melted butter, then roll the chicken in the crumb mixture.  Place the chicken in a shallow casserole dish so that the pieces do not touch.  Sprinkle the remaining crumbs over the chicken and bake covered at 375 degrees for 45 minutes, until tender.

Serve with your choice of delicious sides, such as potato salad, buttered noodles, green salad, and vegetables.
