October Feast: Pumpkin Muffins

Pumpkin Muffins

For a tasty fall breakfast, snack or a dessert, try Pumpkin Muffins.  They are lightly spiced and very flavorful.

Pumpkin Muffins


1 2/3 c. sifted flour

¼ tsp. baking powder

1 tsp. baking soda

¼ tsp. salt

1 tsp. pumpkin pie spice

¼ tsp. ground cloves

1/3 c. raisins

1/3 c. melted butter

1/3 c. water

1 ½ c. sugar

2 eggs

1 generous cup canned pumpkin


Mix wet ingredients thoroughly then add dry ingredients until blended.  I use a mixer.  Pour mixture into muffin tins, using paper liners.  Bake at 350 degrees until golden brown, about 20-22 minutes.  Be careful to not let them brown too much on the bottoms.  Yield: 16 to 18 muffins.
