November Feast: Gobbler Cobbler

If cooking a complete turkey dinner with all the fixings is intimidating or doesn’t fit your schedule, consider preparing Gobbler Cobbler.  It’s a complete meal, featuring turkey, rice and green beans.  The recipe is also good for using left-over turkey, and it can be prepared with chicken.  The dish can be prepared,  frozen and cooked later.

Ingredients:

1 package long-grain wild rice (I used Uncle Ben’s Original Recipe)

1 medium onion, diced

1 small package fresh sliced mushrooms

1 Tbsp. vegetable oil

1 can French-style green beans, drained

3 cups cooked turkey or chicken

1 cup mayonnaise

2 cups grated Cheddar cheese

1 small can sliced water chestnuts, drained

1 tsp. poultry seasoning

1 cup sour cream

1 package refrigerated pie crusts (use one)

1 egg, beaten

Directions:

Preheat oven to 350 degrees F.

Prepare the rice according to package instructions and set aside.  Sauté onions and mushrooms in oil and set aside.

Combine all ingredients, except 1 cup of cheese and the pie crust, into a large bowl and mix well.  Pour mixture into a greased baking dish.  Top with remaining 1 cup cheese and set aside.

Roll out one pie crust and cut ½-inch wide strips and cover dish in lattice design, then brush dough lightly with egg.

Bake in 350 degree F oven for 30 minutes, until top is golden brown.  Remove from oven, let cool, and enjoy.
