For a July feast, featuring red, white and blueberries, try this meal: barbecue chicken (reddish), rice (white), and a fresh blueberry dessert. The barbecue chicken can be cooked in the crock pot, so that makes timing the meal more flexible. See Part 2 for the blueberry desserts.
Barbecue Chicken
Ingredients:
1 tsp. salt
½ tsp. pepper
1 T. paprika
1 T. sugar
1 medium onion, finely chopped or 2 T. dehydrated onions
1/3 c. lemon juice
1 T. Worcestershire sauce
2 T. butter
1 cup ketchup
1 pkg. sliced fresh mushrooms or a jar of sliced mushrooms
1 pkg. skinned chicken pieces
Directions:
Blend salt, pepper, paprika, and sugar in a medium saucepan. Add ketchup, onion, and water. Heat to boiling. Remove from heat; add lemon juice, Worcestershire sauce, butter, and mushrooms. Pour over chicken pieces in a large cooking dish and bake covered at 350 degrees for one hour.
This recipe can also be made in the crock pot, cooking on low heat for about 8 hours.
Serve with rice or mashed potatoes, and a vegetable, such as fried okra.
